Ingredients:
Three Ripe red tomatoes, any type of your choice
1/2 of a medium red onion
Juice from ½ medium lemon
Pinch of Salt to taste
¼ teaspoon of Black pepper
One tablespoon Extra virgin olive oil
A hand full of cilantro
Directions:
Rinse the vegetables and cilantro. Let drain.
Dice the red onion into small pieces.
Dice the tomatoes into small pieces.
Chop the cilantro.
In a bowl, mix the tomatoes, onion, cilantro. Chill in the fridge until it is time to serve.
