Carrot and Ginger Juice
I am drinking this carrot and ginger juice as I am writing this recipe. I can feel the tension in my neck, releasing as my body relaxes; this drink puts you in a good mood! You are going to love the flavor of carrot combined with the sweetness of the orange. Plus, the distinctive spiciness from the ginger gets your attention as you take every sip. It wakens your palate’s senses, and it centers you as you become aware of every flavor in this juice.
It is always good to have some carrots in the fridge. Sometimes, I use orange juice bought from the store if I don’t have any fresh oranges available, although it is better to use freshly squeezed orange juice if you can.

Carrots are rich in beta carotene which our bodies convert to vitamin A, also a good source of Vitamin C, vitamin K, folate, phosphorus, and calcium.

Ingredients:
Two medium carrots
One cup of freshly squeezed orange juice, which is about two large oranges
Four thin slices of fresh ginger root (like the picture above)
Blender to blend the juice
Mint to garnish if desired
Directions:
Clean, peel, and cut the carrots into small pieces to blend quickly in a juicer or blender.
Clean the ginger root, peel the rough skin, and cut into thin slices just like the picture above.
Add the carrot, ginger, and orange juice to the blender, Blend until smooth.
Garnish with mint if desired. Enjoy!
