Healthy Greek Yogurt Dip with Fresh Herbs and Olives
With fresh herbs and olives, this Greek yogurt dip will make the perfect side dish for parties or just hanging out. Pair it with fresh vegetables, chips, or even chickpea tortillas. This dip can work with pretty much anything.
You can do so much with Greek yogurt. It is one of those versatile ingredients that I end up using all the time. I usually have it on hand in the fridge, and so should you!
When combined with the flavors from garlic, cilantro, and olives, the result is a fantastic, flavorful dip!
Ingredients:
Two cups of plain Greek yogurt, preferably low fat
A handful of green olives
A handful of kalamata olives
One cup of fresh parsley, chopped
Five garlic cloves
One tablespoon of extra virgin olive oil, and a little different from drizzling at serving
¼ teaspoon of salt
¼ teaspoon of black pepper
About one tablespoon of dried oregano
Sliced jalapeño or red pepper flakes to spice it up a little
Directions:
Chop the garlic and the olives.
In a small pan over medium heat, combine the garlic and olive oil. Let the garlic sizzle in the olive oil for few seconds to release its flavor. Then add the cilantro and stir for few seconds. Finally, add the olives, oregano, salt, and pepper.
If you want to make it spicy, this is the time to add sliced jalapeño or red pepper flakes.
Stir for a minute or so, then turn off the heat.
Serve with fresh vegetables like yellow bell peppers, orange bell peppers, red bell peppers, cucumber, celery, and carrots, or try a grain such as healthy chips or toasted bread. My husband loves it with chickpea tortillas.
