Healthy 100% Chickpea Tortilla, Gluten-Free Tortilla
We should all strive to increase the nutritional value of the food that we eat on a daily basis.
If I had to make a simple list of delicious super nutritious foods, this recipe would shoot to the top. It has become one of the staple foods that I have on hand in my kitchen. We make egg tacos for breakfast and healthy chicken or vegetarian tacos for lunch or dinner. This has completely replaced flour tortillas in my house!

It may sound like a broken record, but it bears repeating that chickpea is one of the healthiest legumes out there! Finding creative ways to add this legume to your diet on daily basis is a must. Chickpeas are full of proteins and fiber, micronutrient dense, and gluten-free!
When I make these tortillas, I don’t limit myself to any one method. They are so versatile that you can go crazy with flavors! Don’t be afraid to throw in your favorite spices or vegetables. I often make several different varieties at once, such as jalapeño, sautéed mushrooms, or olives. You can even add seeds to increase nutritional value.
Ingredients:
Three cups of 100% chickpea flour
Three cups of water
1 ½ teaspoon of salt
Optional to add flavors to tortilla:
Sliced jalapeño
Slice fresh garlic
Herbs like cilantro, parsley, oregano, or thyme
Seeds like chia, sesame, or flax seed
Sautéed onion or mushroom
Directions:
Sift the chickpea flour into a bowl a little at a time until you have sifted all 3 cups. Sifting the flour will make it light and easy to mix. Next, add the salt and mix well.
When the salt and flour is mixed, make a small hole in the center of the pile of flour. Begin adding the water a little at a time in the center of the flour and mix as you go. Continue to mix the chickpea flour and water well until the mixture becomes creamy (See the video).
Let the batter rest at room temperature for 5 minutes.
Now we are ready to cook the tortillas. Place a nonstick pan on medium heat and pour a little amount of batter. Start with a small amount to cover the bottom of the pan with a thin layer of batter. You don’t want it too thick. The lighter it is, the more flexible it will be.
After putting the batter on the hot pan, move the pan around for the batter to cover the bottom of the pan. Cook for about one minute per side until golden brown, then flip the tortilla using a spatula.
For adding flavors:
Place the different ingredient flavors you want into the pan. For example, for the jalapeno tortilla, lay the jalapeno slices into the pan before pouring the batter in the pan. Pour the chickpea batter on the top and move the pan around until all the sliced jalapenos are covered with the batter. Let cook for a minute or so until golden brown, then flip and let cook for another minute. About a minute of cooking per side.
To add the seeds to chickpea tortilla, add the batter first to the pan then sprinkle the seeds of your choice on the top. Cook for one minute per side.
