Laila’s Healthy and Delicious Breakfast
This breakfast is the type of meal that makes you want to wake up! it jump-starts my metabolism and cuts down on my snacking during the day. The healthy ingredients in this breakfast make it not only tasty and comforting but also nutritious. The spinach, red onion, mushrooms, tomatoes, kalamata olives, and eggs give this breakfast a fantastic flavor and make you want to have it more often! It is one of my favorite meals to have in the morning. It is micronutrient dense and full of antioxidants and anti-inflammatory properties.
Ingredients:
Six grape tomatoes
Three baby Bella mushrooms
¼ of medium red onion
One cup baby spinach
One large garlic clove
Eight to ten whole Kalamata olives
One egg
One fresh green onion
1/4 teaspoon of ground cumin
1/4 teaspoon of salt
1/4 teaspoon of black pepper
One tablespoon of extra virgin olive oil
Crushed red pepper flakes to add some spice or heat (optional)
Directions:
Brush off any dirt from the mushrooms and slice thin.
Dice the garlic and slice the red onion thin
Clean the grape tomatoes and cut in half
Clean the green onion and chop, then set aside to garnish at the end
In a skillet over medium heat, add a tablespoon of extra virgin olive oil, garlic, red onion, and mushrooms.
Let cook for 3 minutes.
After 3 minutes, add the spinach, tomatoes, salt, and black pepper.
Let it cook for about 1 or 2 minutes or until the spinach starts softening. Then add the egg and the kalamata olives.
Turn off the stove when the egg is cooked the way you like it.
When serving, sprinkle some cumin, chopped green onion, and crushed red bell peppers(optional).
Serve as is or with whole-grain toast. Enjoy!
