Lentils have an earthy flavor and come in a yellow, green, orange, or brown:
- Can be added to a salad, soup, or curry dish
- Micronutrient dense and high fiber food
- Have a low glycemic load of 9 in one cup
- Have a slowly digestible and resistant starch
- Second highest protein of any vegetable
- Rich in biotin, fiber, folate, iron, magnesium, manganese, phosphorus,
- potassium, zinc, and vitamin B6
- Good food for a diabetic
- Cook faster and don’t need soaking
- Have more vitamin C when they are sprouted
