Kidney Beans and Brown Rice Bowl
This quick and easy to make meal-in-a-bowl knocks down your excuses to eat healthy! Combining a healthy grain with beans, tomatoes, and red onions make this bowl a complete meal!
I decided to make it a rule to keep some type of bean on hand cooked and ready to go in my fridge. This way, it is readily available to use when needed. Combining the kidney beans with a “must-have” vegetable like red onions and tomatoes increases the nutritional value of this meal.
Healthy meals can be as simple as this bowl. Cheap and easy to make requiring only a few simple ingredients.
Ingredients:
Two cups of cooked brown rice
One cup of cooked Kidney beans
One cup of cooked yellow corn
One cup of grape tomatoes, sliced in half
Half medium red onion, diced
Few branches of cilantro, chopped
Juice of one medium lemon
Two teaspoons of yellow mustard
½ teaspoon of salt
½ teaspoon of black pepper
One tablespoon of extra virgin olive oil
Direction:
In a large bowl mix the beans, brown rice, yellow corn, sliced tomatoes, red onion, and chopped cilantro.
In a separate small bowl or empty jar, combine the mustard, juice from one medium lemon, extra virgin olive oil, salt, and black pepper. Mix well.
Add the dressing to the bean and rice mixture. Toss and serve. Enjoy!
