Roasted Red Bell Pepper over Toasted Whole Wheat Bread

I usually have some red bell pepper in the refrigerator to use in my recipes as needed. As a rule, any time I have a hot oven or the grill going (even for another meal) I will try roast or grill some vegetables such as sweet potatoes, eggplants, or bell peppers. It is convenient and I get them ready for my recipes later in the week.
Ingredients:
One red bell pepper
Whole wheat bread
Extra virgin olive oil
Pinch of salt
Pinch of black pepper
1/2 teaspoon dry oregano
Red chili flakes (optional) to spice things up
Direction:
To roast the bell pepper in oven:
Rinse the bell pepper under running water. Preheat your oven to 375 degrees Fahrenheit or 190 degrees Celsius. Place the bell peppers on a baking pan. Place the pan in the oven and let cook for about 45 minutes; making a ¼ turn on the bell pepper every ten minutes so that all four sides turn brown. When the bell pepper is cooked evenly on each side, remove from the oven and place it in a container. Cover, and allow to cool to room temperature. After the pepper cools, peel the skin as much as you can and set aside.

Toast the pieces of the wheat bread. Drizzle some extra virgin olive oil over the bread, preferably while it is still warm. Next, place the roasted red bell pepper on the top of the bread and season with salt and black pepper as desired. Finally, sprinkle on some dry oregano leaves. Enjoy!
