Sweet Potatoes with Cumin and Red Onion drizzled with Olive Oil
I love this sweet potato recipe, and I promise you will as well! I am always trying to come up with recipes that are easy to make but delicious. Since I began making this recipe, it has become very popular with my family! The combination of the flavors of cumin, sweet potatoes, red onion, and extra virgin olive oil make this recipe mouthwatering delicious. And it’s on the Laila Approach, so you know it is nutritious!
Sweet potatoes are one vegetable that is always on my shopping list, just like red onion and garlic, all year around. I always have them in hand to add to my recipes, to grill, roast, or to make my son’s favorite vegetable pancake.
Why are sweet potatoes always on my list? Simple! They are not only SWEET but also are high in fiber, vitamin A, vitamin C, magnesium, calcium, phosphorus, and folate. And do you know who likes the fact that they are sweet but does not care about anything else? KIDS! My son loves sweet potatoes, and I love giving him nutrition.
Serves about 6 to 8
Ingredients:
Three sweet potatoes
½ cup of finely diced red onion
One teaspoon of ground cumin
¼ teaspoon of salt
One tablespoon of extra virgin olive oil
Direction:
Clean the potatoes thoroughly. Wrap each sweet potato individually in aluminum foil and place in oven rack.
Preheat the oven to 375 degrees. Bake the potatoes in the oven for 30 to 35 minutes. Cook until tender. Make sure not to overcook as we want the potatoes to be firm when cutting.
When the potatoes are tender but not too mushy, remove from the oven. Let cool to room temperature.
After the potatoes have cooled to room temperature, cut in little squares, and place in serving bowl or plate.
Add the ½ cup of finely diced red onion. Sprinkle the ground cumin and salt, and drizzle the extra virgin olive oil on the top. Toss gently few times to make sure all the ingredients are mixed well. Garnish with cilantro or mint if desired and serve.
If you are cumin fan like me, sprinkle more cumin on the top.
NOTE: I did a version of this recipe where I made a mashed sweet potato as opposed to cutting in squares. My husband said it was amazing and preferred it that way. Instead of tossing the potatoes with the spices and onion, you mix it as you would regular mashed potatoes.
