Avocado & Egg Breakfast Toast
You are going to be amazed by the creamy texture of the egg yolk dripping over the avocado soaking the whole wheat toast. I’m imagining it while writing this and I want some, NOW!
Avocado toast has become very popular due to the taste and simplicity. Adding an egg and the vegetables below take any simple avocado toast to another level. I guarantee you; you will be licking your finger trying to get every last bite.
The healthy ingredients in avocado, green leaves, and whole wheat bread are going to provide you energy for the day and keep you satisfied until lunch.
Ingredients:
One small avocado
A quarter of a red onion
One cup of mixed greens
A piece of whole wheat bread
One egg
Salt and pepper to taste
Pinch of cumin
Pinch of paprika
Extra virgin olive oil
Lemon juice
Directions:
Slice the red onion into thin slices.
In a bowl add the mixed greens, red onion slices, squeeze of lemon, salt and pepper to taste, and a drizzle of extra virgin olive oil. Toss well and set aside.
Cut the avocado in half, remove the seed and peel off the skin. Dice and smash the avocado slightly then add a pinch of salt, a pinch of black pepper, and a squeeze of lemon juice!
Poach or fry one egg. In this recipe I fried the egg in a little bit of extra virgin olive oil. Set aside.
Toast a piece of wheat bread of your choice.
To assemble this amazing toast, place the toast on a serving place, spread the avocado on the top. Add the mixed greens mixture over the avocado. Then add the egg over the mixed greens. Sprinkle a pinch of paprika and cumin. Enjoy!
